{"id":35626,"date":"2026-04-13T19:38:21","date_gmt":"2026-04-13T17:38:21","guid":{"rendered":"https:\/\/surbooke.fr\/wordpress\/?p=35626"},"modified":"2026-04-14T09:49:13","modified_gmt":"2026-04-14T07:49:13","slug":"bocuse-gautier-battistella-editions-grasset","status":"publish","type":"post","link":"https:\/\/surbooke.fr\/wordpress\/2026\/04\/13\/bocuse-gautier-battistella-editions-grasset\/","title":{"rendered":"Bocuse, Gautier Battistella, \u00c9ditions Grasset"},"content":{"rendered":"\n<p><strong>Il<\/strong> <strong>fut<\/strong> <strong>l&rsquo;homme<\/strong> <strong>de<\/strong> <strong>Collonges-au-Mont-d&rsquo;Or<\/strong>, un bourg situ\u00e9 \u00e0 quelques kilom\u00e8tres au nord de Lyon. De la Sa\u00f4ne o\u00f9 il souhaita que ses cendres soient jet\u00e9es. Il fit du m\u00e9tier de cuisinier une fiert\u00e9 d\u00e9sormais glorifi\u00e9e dans le monde entier. Paul Bocuse est n\u00e9 en f\u00e9vrier 1926 dans le restaurant familial tenu par ses parents Georges et Irma. En un lieu qui s&rsquo;inscrivait dans une longue histoire, puisqu&rsquo;on retrouve trace en 1765 d&rsquo;un Michel Bocuse dont l&rsquo;\u00e9pouse r\u00e9galait les ventres de cochonnailles et de fritures de petits poissons. La transmission fut toutefois interrompue quand le grand-p\u00e8re de Paul vendit nom, fonds de commerce et murs \u00e0 un investisseur. Le p\u00e8re de Paul dut ainsi s&rsquo;installer \u00e0 400 m\u00e8tres du restaurant de ses a\u00efeux, et c&rsquo;est l\u00e0 que le petit Paul apprit le m\u00e9tier. \u00c0 douze ans son p\u00e8re lui demande de tuer la dindonne du r\u00e9veillon et de la farcir. Le lendemain il utilise les restes pour agr\u00e9menter le chou et pr\u00e9pare le gratin parmentier. Le principal changement qui affecte Paul pendant l&rsquo;occupation est qu&rsquo;il part en apprentissage \u00e0 Lyon. Mais \u00e0 la Lib\u00e9ration il s&rsquo;engage avec trois amis sans aucune formation militaire dans la premi\u00e8re division fran\u00e7aise libre. Il en revient vivant mais de peu. En 1946 Paul escalade \u00e0 v\u00e9lo le col de la Lu\u00e8re dans les monts du Lyonnais. C&rsquo;est l\u00e0 qu&rsquo;Eug\u00e9nie Brazier dirige avec autorit\u00e9 un de ses deux restaurants trois \u00e9toiles. Cette \u00ab M\u00e8re lyonnaise \u00bb n&rsquo;a pas eu une vie facile. Elle a \u00e9t\u00e9 plac\u00e9e dans une ferme par l&rsquo;Assistance publique \u00e0 la mort de sa m\u00e8re, elle fut fouett\u00e9e au sang par son p\u00e8re avec un nerf de b\u0153uf quand elle se retrouva enceinte \u00e0 dix-neuf ans. Tous les commis la craignent et Bocuse \u00e2g\u00e9 de vingt ans ne fait pas exception. Il part un an apr\u00e8s avec en t\u00eate les recettes de la poularde de Bresse demi-deuil, des quenelles, et de la langouste belle aurore. Direction Valence chez Fernand Point o\u00f9 l&rsquo;ambiance est tout autre. Le roi des lieux ne porte pas le tablier de chef, il se r\u00e9serve le r\u00f4le de conteur. C&rsquo;est lui qui emm\u00e8ne Bocuse chez Lucas Carton \u00e0 Paris pour qu&rsquo;il poursuive son apprentissage. Si l&rsquo;abolition de l&rsquo;esclavage remonte \u00e0 1848, les propri\u00e9taires des grands restaurants b\u00e9n\u00e9ficient d&rsquo;un passe-droit. Les commis en cuisine sont d&rsquo;autant plus dociles que les temps sont durs pour les restaurateurs. \u00c0 Collonges o\u00f9 Bocuse rejoint son p\u00e8re, l&rsquo;\u00e9tablissement familial vivote. \u00c7a va changer.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"has-medium-font-size\">Il aimait se moquer de \u00ab Gros et Nigaud \u00bb<\/p>\n<\/blockquote>\n\n\n\n<p>J&rsquo;avais bien aim\u00e9 <em>Chef<\/em> de Gautier Battistella, j&rsquo;ai ador\u00e9 son <em>Bocuse.<\/em> Celui que Christian Millau avait sacr\u00e9 \u00ab Cuisinier du si\u00e8cle \u00bb aux c\u00f4t\u00e9s de Jo\u00ebl Rebuchon et de Fredy Girardet, nous est pr\u00e9sent\u00e9 comme un ogre jamais rassasi\u00e9. Loin de remercier le critique gastronomique, il lui avait r\u00e9pondu : \u00ab <em>Ah<\/em> <em>bon<\/em>, <em>parce<\/em> <em>qu&rsquo;il<\/em> y <em>en<\/em> <em>a<\/em> <em>deux<\/em> <em>autres<\/em> <em>?<\/em> \u00bb. Bocuse n&rsquo;aimait pas qu&rsquo;on lui vole la lumi\u00e8re, sauf s&rsquo;il s&rsquo;agissait de la partager avec des copains. Aussi d\u00e9testait-il les deux cr\u00e9ateurs du guide Gault&amp;Millau qui pr\u00e9tendaient lui apprendre son m\u00e9tier, et dont il pensait qu&rsquo;ils vivaient \u00e0 ses d\u00e9pens. Il se plaisait \u00e0 dire que Millau ne savait pas manger, et que c&rsquo;\u00e9tait pour cela qu&rsquo;il venait au restaurant avec son chien. Quand le cabot remuait la queue, cela voulait dire que c&rsquo;\u00e9tait bon. Il aimait se moquer de \u00ab Gros et Nigaud \u00bb qui pensaient avoir d\u00e9couvert la nouvelle cuisine en mangeant chez lui une salade de haricots verts <em>al<\/em> <em>dente<\/em>, qui n&rsquo;\u00e9tait rien d&rsquo;autre qu&rsquo;une recette de sa grand-m\u00e8re. Toute sa vie Bocuse en a voulu plus. Plus d&rsquo;honneurs, plus de femmes, plus d&rsquo;argent. Il eut successivement une, puis deux et enfin trois \u00e9toiles Michelin. Les seules qui comptaient. Mais ces signes de r\u00e9ussite concernaient un \u00e9tablissement, alors il concourut et obtint le titre de meilleur ouvrier de France. Il eu aussi la L\u00e9gion d&rsquo;honneur que lui remit Valery Giscard d&rsquo;Estaing \u00e0 l&rsquo;\u00c9lys\u00e9e. Et pour mieux marquer l&rsquo;histoire, il cr\u00e9a les Jeux olympiques de la gastronomie, \u00e0 Lyon, obligatoirement \u00e0 Lyon, qu&rsquo;il appela les Bocuse d&rsquo;or. Des femmes il en eut officiellement et simultan\u00e9ment trois. La premi\u00e8re g\u00e9rait le restaurant, la seconde lui donna un fils, et la troisi\u00e8me le transforma en ic\u00f4ne. Quant aux autres, impossible de les compter. En \u00e9tendant son empire aux \u00c9tats-Unis et au Japon, le roi de Collonges gagna beaucoup d&rsquo;argent. S&rsquo;y ajoutaient ses partenariats avec les firmes agroalimentaires et les fabricants de mat\u00e9riel de cuisine. Malgr\u00e9 sa place dans l&rsquo;histoire culinaire Bocuse n&rsquo;inventa que deux plats : le loup en cro\u00fbte et la soupe aux truffes. Il r\u00e9p\u00e9tait ce qu&rsquo;il avait appris chez ses ma\u00eetres et aimait transmettre. Il adorait retrouver ses potes Troisgros, Gu\u00e9rard, Verg\u00e9, Chapel avec lesquels il pensait former en termes de gastronomie l&rsquo;\u00e9quivalent de l&rsquo;\u00e9quipe de football br\u00e9silienne mill\u00e9sime 70. Il en \u00e9tait n\u00e9cessairement le capitaine.
